  1. Preheat Oven

    Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Cook Onion and Garlic

    Heat oil in a large skillet over medium-high heat. Add onion and 1 tsp salt. Cook, stirring frequently, until onion is golden and very soft, 7-10 minutes. Stir in garlic and cook, stirring constantly until softened, about a minute.
  3. Add Beef and Taco Seasoning

    Add beef and sprinkle with taco seasoning. Use a spoon or sturdy spatula to break it into small chunks and to stir it well with the onion mixture to combine. Cook until beef renders its fat and browns, about 10 minutes.
  4. Spread Refried Beans

    Meanwhile, spread the refried beans evenly along the bottom of your prepared baking dish.
  5. Layer Chips

    Layer half of the chips over the beans.
  6. Spread Taco Meat and Sour Cream

    Spread the taco meat mixture over the chips, then dollop the sour cream over the meat, spreading it out as evenly as possible.
  7. Top With Cheese

    Top with the shredded cheese.
  8. Bake

    Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  9. Top With Taco Toppings

    Allow the casserole to cool for a few minutes before topping it with your chosen taco toppings and serving with the remaining chips.
