Pre-heat smoker to 200°F.
Rub brown sugar on bacon if wanting a sweet bacon. If not, omit the sugar. Place bacon on a cooling rack atop a baking dish.
Smoke for 30 minutes and then increase the temperature to 400°F. After temperature hits 400°F, smoke another 15 to 30 minutes until bacon is your desired crispness.
