Pig ears are a popular ingredient in various cuisines worldwide, including Southern cooking. When cooked correctly, pig ears become crispy on the outside while remaining tender and chewy on the inside.

Ingredients
  • 6 pig ears
  • 2 tablespoons salt
  • 1 tablespoon black peppercorns
  • 4 bay leaves
  • 2 cloves garlic, crushed
  • 1 tablespoon olive oil
  • Optional: hot sauce or barbecue sauce for serving
Instructions
  1. Rinse EarsStart by rinsing the pig ears under cold water to remove any dirt or debris. Next, place them in a large pot and cover them with cold water.
  2. Add Ingredients and BoilAdd salt, black peppercorns, bay leaves, and crushed garlic to the pot with the pig ears. Place the pot on the stove over high heat and bring it to a boil. Once boiling, reduce the heat to low and let the pig ears simmer for about 2 hours or until they are tender.
  3. Remove From PotOnce the pig ears are tender, remove them from the pot and let them cool slightly. Once they are cool enough to handle, pat them dry with a paper towel to remove any excess moisture.
  4. SliceSlice the ears into 1/2 inch strips
  5. FryHeat the olive oil in a frying pan over medium-high heat. Once the oil is hot, carefully add the pig ears to the pan. Fry them for about 5 minutes on each side or until they turn golden brown and crispy.
Note

Once fried, remove the pig ears from the pan and place them on a paper towel to drain any excess oil. Serve them hot with your favorite dipping sauce, such as hot sauce or barbecue sauce. Pig ears can be enjoyed as an appetizer or as a unique addition to a Southern-style meal.
